15-MINUTE COUSCOUS SALAD

We love quick and easy salads! But often, salads aren't very filling, and you can quickly get bored with the same flavours. This lovely couscous salad won't be boring you any time soon though! Packed with flavour yet super simple, this salad is ready in just 15 minutes - perfect for busy weeknights and meal prep for packed lunches. And thanks to the couscous, it's both healthy and filling, a rare combination among salads.


Ingredients for Spicy Mushrooms:

  • 2 jars of mushrooms (400 g/14 oz)
  • 1 tsp. paprika
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. oregano
  • 1 tsp. chilli powder (adjust according to chilli preferences)
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 2 tbsp. olive oil


Instructions:


  1. Toss the mushrooms in the spices and olive oil.
  2. Sautée for approx. 10-15 minutes or until lightly browned all over. 


Ingredients for Salad:


  • 175 g (6 oz) sun-dried tomatoes 
  • 15 red cherry tomatoes
  • 2 large stalks of celery
  • 1 bunch of parsley
  • 0.5 a small red onion
  • 2 tsp. lemon juice
  • 250 ml (1.1 cups) couscous
  • 500 ml (2.2 cups) water
  • 1 bouillon cube


Instructions:


  1. While the mushrooms are browning, boil the water in a pot or kettle. Pour the water in a salad bowl and dissolve the bouillon cube in it. Immediately toss in the couscous and stir for a few seconds. Let it rest for 10 minutes.  
  2. Meanwhile, finely chop the tomatoes, celery, onion, sun-dried tomatoes, and parsley.
  3. Mix the couscous with all the veggies, and drizzle the lemon juice on top.
  4. Top with mushrooms and serve!
