EASY VEGAN SALAD

Everyone loves a good salad!

Well, maybe not picky kids and grownups that haven't quite grown up yet... But this salad is so delicious that it might actually make them rethink the concept. 


This quick and easy recipe gives you an amazing, healthy, vegan salad that actually tastes like something. With fresh kale, the salad has a natural crunch, while parsley and fresh datterino tomatoes add a lot of flavour.

Let's mix some greens!


Ingredients (serves 2):


  • 10 large lettuce leaves
  • 40 g (1.4 oz) fresh parsley
  • 40 g (1.4 oz) fresh kale
  • 200 g datterino or cherry tomatoes


Instructions:


  1. Chop the lettuce, parsley, and kale in small strips and toss in a bowl. Don't throw away the parsley stems. Instead chop them finely, and add them to the leafy mix. 
  2. Chop the tomatoes into 2, 4, or 8 pieces depending on their size or your preferences. Toss in the bowl with greens.
  3. Mix well with a light olive oil-based salad dressing. Preferably this one with garlic, lemon juice, and extra parsley.
