FLUFFY VEGAN HEALTHY-ISH PANCAKES

There's nothing like a weekend morning with a fat stack of vegan pancakes with an ocean of maple syrup. Well, not just mornings or weekends for that matter. Pancakes are always good!


This recipe is for a slightly healthier version of vegan pancakes where half of the flour is lovely quinoa flour that adds a bit more protein and less carbs. At the same time, most of the liquid is aquafaba, which makes the dough stick together well.

Ingredients:


  • 85 g (3 oz) all purpose flour
  • 85 g (3 oz) quinoa flour
  • 90 ml (3 fl. oz) almond milk
  • 230 ml (7.8 fl. oz) aqua faba
  • 2 tbsp. vanilla sugar
  • 1.5 tbsp. baking powder


Instructions:


  1. Whisk all the ingredients except the baking powder together. 
  2. Whisk in the baking powder.
  3. Let the dough rest for 10 minutes.
  4. Cook on a pan in sunflower oil or vegan "butter".
    We made mini pancakes, but you're the master of shape and size.
  5. Enjoy with maple syrup or vegan hazelnut cream.
