HHBB (Heavenly Healthy Burger Buns)

Burger buns can taste like heaven, while still being healthy and entirely plant-based. Yes, maybe we're a little obsessed with all things burger-related, but that doesn't mean these aren't still heavenly. And having a quick, easy, and awesome burger recipe on hand is always useful for that next barbeque party or Saturday hangover. So read on and enjoy! 


Ingredients:


Buns:

  • 600 g (4 cups) flour
  • 300 g (2 cups) whole wheat flour
  • 250 g (1.7 cups) chickpea flour
  • 500 ml (2 cups) lukewarm water
  • 250 ml (1 cup) plant milk (we used oat)
  • 2 tsp. Himalaya salt (or regular salt)
  • 17 g (0.6 oz) active dry yeast (or 75 g/2.6 oz yeast)
  • 1.5 tbsp. sesame seeds
  • 1.5 tbsp. chia seeds


For the "eggwash", mix:

  • 50 ml (1.7 fl. oz) water
  • 50 ml 1.7 oz) flour 


Instructions:


  1. In a stand mixer or a large mixing bowl, stir together the lukewarm water and yeast. Let it rest for 5 minutes. 
  2. Add the salt and plant milk to the yeasty water. Little by little, add the three types of flour to the liquid while mixing on high speed. 
  3. When all the flour is mixed in, the dough should stick to the dough hook, but it should still not separate from the bottom of the bowl.
  4. Cover the mixer bowl with a damp kitchen towl and let the dough rest for 1 hour.
  5. Now it's time to form the buns. We made 12 buns out of the dough, but they got huge, so you could easily make 15-20 smaller buns. That's between you and the size of your patties.  
  6. Cover the buns with the damp kitchen towel from before and let them rise for 30 minutes. Use this time to preheat your oven to 200°C (390°F).
  7. Mix together the 50 ml (1.7 fl. oz) water and 50 ml (1.7 oz) flour to make the "eggwash". We used a hand blender to mix it fast. Take off the kitchen towel, and brush your buns with the mix.
  8. Drizzle with the sesame and chia seeds, and bake for 20-30 minutes in the oven until golden.
