There's a reason everyone loves tacos. They're crispy, creamy, savoury, sweet, and salty all at once. This take on tacos goes for a slightly healthier, low-carb version by swapping out the taco shell with lettuce and topping the taco with tortilla chip pieces instead to preserve that wonderful crunch.

Enjoy with homemade salsa and buckets of guacamole!

Ingredients for "Meat":

  • 300 g (11 oz) vegan minced meat or our very own MincedGreens
  • 30 g (1 oz) shiitake mushrooms, dried
  • 1 tbsp. paprika
  • 1 tbsp. smoked paprika
  • 1 tbsp. cumin
  • 1 tbsp. chilli powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. cane sugar
  • 1 tsp. vegetable fond
  • 1 onion, chopped
  • 3 cloves of garlic, crushed
  • 2 tbsp. olive oil


  1. Soak the shiitake mushrooms in cold water for about 30 min. Cut off any hard stems if necessary.
  2. Once soaked, chop the shiitake mushrooms in small pieces.
  3. In a large frying pan, stir fry the onion, garlic, and shiitake for a few minutes until any excess water from the shiitake has evaporated.
  4. Add the vegan minced meat, spices, and fond and stir fry until cooked through.

Salsa and Guac Time!

While the meaty filling is cooking, you can make the salsa and guacamole.


  • 200 g (7 oz) cherry tomatoes
  • 1 small red onion
  • 1 clove of garlic, crushed
  • 1 fresh yellow chilli or 1 tsp. chilli flakes (adjust according to chilli preferences)
  • 4 tbsp. lemon juice
  • 1 tbsp. ketchup
  • 0.5 tsp. paprika
  • 0.5 tsp. cumin
  • 0.5 tsp. freshly ground black pepper
  • Handful of fresh coriander leaves/cilantro
  • Salt to taste

  1. Finely chop the tomatoes and onion, and mix in the rest of the ingredients.


  • 2 ripe, pitted avocados
  • 1 small red onion
  • 8 cherry tomatoes
  • 1 clove of garlic, crushed
  • 3 tbsp. lemon juice
  • 0.5 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. freshly ground black pepper
  • Salt to taste

  1. Mash the avocados with a fork, or blend for extra fluffy guacamole.
  2. Chop the onion and tomatoes.
  3. Mix all the ingredients well.

The Assembly:

  • 2 heads of baby romaine lettuce
  • 1 bag of tortilla chips

  1. Fill each lettuce leaf with vegan minced meat, top with salsa and guacamole, and drizzle with tortilla chip pieces.
  2. Enjoy!
