LUMACONI GIGANTI BOWL

One day, in a fancy supermarket, we saw these strange but beautiful giant pasta shells called Lumaconi Gigainti, and we had to try them (are we allowed to call it pasta, or is it sort of like all bubbly wine must not be called Champagne?). Well, we can safely say they're awesome!


We came up with this garlic and mushroom packed bowl drizzled with "cheesy" sauce, and we're sure you'll love it just as much as we do. 


Ingredients:


  • 250-300 g (8.8-10.5 oz) Lumaconi Giganti
  • 350 g (12.3 oz) mushrooms (sliced)
  • 5 cloves of garlic (crushed)
  • 1 onion
  • 10 sun-dried tomatoes (chopped) 
  • 100 g (3.5 oz) kale (frozen or fresh)
  • Fresh parsley - a large handful
  • 1.5 litres (6.3 cups) vegetable stock
  • 2 tsp. dried oregano 
  • 1 tsp. chilli flakes
  • 2-4 tbsp. olive oil for frying
  • 4 tbsp. nutritional yeast flakes
  • Fresh basil leaves for the garnish


Instructions:


The lumaconi:

  1. In a large pot, bring the 1.5 litres (6.3 cups) vegetable stock to a boil and add the lumaconi giganti. Don't pour all the stock out when the pasta's done because you need 200 ml (0.8 cups) for the sauce! It should boil for about 15 minutes so use this time to prepare the rest.

  

The mushrooms and stuff:

  1. In a large pan, fry the mushrooms in olive oil for 5 minutes on medium heat. Stir every once in a while.
  2. Meanwhile, chop the onion and crush the garlic. Add them to the pan along with the chopped sundried tomatoes, and keep frying until everything is lightly browned. 
  3. Chop the parsley and kale (if using fresh) and add them to the pan.
  4. Add oregano and chilli, and stir everything together.
  5. Remove the pan from the heat.


The sauce:

  1. When the lumaconi is properly cooked, pour 200 ml (0.8 cups) of the vegetable stock/pasta water into a small bowl and discard the rest.
  2. Add the 4 tbsp. nutritional yeast flakes and stir it together. This is your "cheesy" sauce.


Finishing up:

Mix the lumaconi giganti, the mushrooms and stuff, and the sauce in the pot you boiled the lumaconi in. Garnish with fresh basil in the pot or in your bowl.
