MINI VEGAN FLOWER OMELETTES WITH FACON

Yes, vegan omelettes (or omelets) exist. They are, of course, made of the glorious chickpea (seriously, what would we do without chickpeas??) in flour form. 


These mini omelettes topped with facon bits (vegan bacon) are the perfect breakfast or brunch, especially when you're craving something savoury and a smoothie won't do, or you just want to impress some brunch guests. Either way, get cracking!


Ingredients:


  • 8 cherry tomatoes
  • 1 jar of sliced mushrooms (180 g/6.3 oz drained weight)
  • 1 red onion
  • 4 cloves of garlic, crushed
  • 0.5 tsp. kala namak (Himalayan black salt)
  • 0.5 tsp. pepper
  • Pinch of tumeric
  • 1 tbsp. yeast flakes
  • 0.5 tsp. lemon juice
  • 0.5 tsp. vegetable fond
  • 100 ml (0.5 cup) chickpea flour
  • 100 ml (0.5 cup) unsweetened plant milk (we used soy)
  • 3 small bell peppers in assorted colours
  • 175 g (6 oz) facon bits
  • Small handful of chives for garnish
  • Olive oil for frying


Instructions:


  1. Start by frying the mushrooms in a little olive oil until golden brown.
  2. Finely chop the onion. Add it to the mushrooms.
  3. Add the garlic to the mushroom/onion blend. 
  4. In a bowl, whisk together the chickpea flour, plant milk, lemon juice, yeast flakes, vegetable fond, kala namak, pepper, and tumeric. It will thicken slightly after a few minutes.
  5. Add the veggies to the omelette mixture and stir. 
  6. Cut the tops and bottoms off the bell peppers. Save these and any other extra bits for another dish (we froze ours). Remove the seeds and middles of the peppers. Slice the bell peppers in thin slices approx. 5 mm (0.2 inches) thick. 
  7. Grease a large frying pan with a little oil, and spread out as many bell pepper "flowers" on it as possible. 
  8. Spoon enough of the omelette mixture into each flower to fill it, but don't over stuff the flowers because the omelette mixture will rise slightly as it cooks. 
  9. Steam the omelette flowers approx. 7 minutes under a lid until the mixture is firm enough to flip over and the bottom of each omelette is golden brown.
  10. While you're waiting for the omelettes to cook, fry up your facon bits.
  11. Fry the other side of the flowers for 2-4 minutes until golden brown.
  12. Top with facon bits and chives and serve immediately.
