PINEAPPLE BOWL-JITO COCKTAIL

There's nothing quite as refreshing as fruit and cocktails on a hot summer day. But combining the two is even better! This Pineapple Bowl-Jito puts a pineapple-y and passion fruit-y twist on the beloved Mojito. Why? Because we had a pineapple sitting around the kitchen, and we also wanted Mojitos. It's that simple. The passion fruit was just at the right place at the right time. 


With the sweetness of the pineapple and tartness passion fruit complementing each other, and the mint giving the drink a kick while the sparkling water makes us feel fancy, the whole combination is delicious and refreshing. We'll definitely be making this again. Hope you do too!


Ingredients:


  • 1 pineapple, refrigerated
  • 2 passion fruits
  • 2 tsbp. lime juice 
  • 80 ml (2.7 fl. oz) vodka
  • 300 ml (10 fl. oz) sparkling water, cold
  • Handful of fresh mint leaves
  • 2 tbsp. brown sugar (for garnishing the pineapple bowls)
  • Ice cubes (optional)



Instructions:


  1. Cut the pineapple in half. The two halves will be your "bowls".
  2. Cut the leafy top off the top half of your pineapple - be careful not to cut too close to the pineapple itself or your pineapple "bowl" will leak.
  3. Using a metal spoon, dig out the insides of the pineapple halves to hollow them out into bowls. You might need to use a small knife to cut out the tough, middle part of the filling.
  4. Save about 4 tablespoons of pineapple pieces for the drink, and save the rest for later (we froze ours for a future smoothie).
  5. Arrange the brown sugar on a flat plate, and dip each pineapple bowl into the brown sugar, face down, to coat the rims.
  6. Blend the 4 tbsp. of pineapple with the vodka and lime juice, and divide equally between the two bowls.
  7. Add half the sparkling water to each of the bowls.
  8. Using a mortar and pestle, muddle the mint leaves (save a couple for the garnish) and divide equally between the two bowls.
  9. Empty out one passion fruit each into the bowls. 
  10. Stir the drinks, toss in a couple of (reusable) straws, and garnish with mint leaves. Add ice cubes if the drinks aren't cold enough.
