QUICK STIR-FRIED PARSLEY SALAD

Salads are delicious and healthy, but they can also quickly get boring with the same ingredients every day. Especially when you're forced to eat salads everywhere as a vegan due to lack of vegan food options!


This quick, stir-fried parsley salad is unlike any salad you've ever tasted before. And the chilli flakes give it a wonderfully spicy twist!


Ingredients:


  • 1 big bunch of parsley, chopped
  • 1 onion
  • 1 tbsp. lemon juice
  • 1 tbsp. chilli flakes (adjust according to chilli preferences)
  • 1 tsp. ground black pepper
  • Small handful of curry leaves 
  • Salt to taste
  • Olive oil for greasing pan


Instructions:


  1. Chop the onion and toss it in a pan with olive oil. Stir fry on medium heat until golden brown.
  2. Add the curry leaves, chilli flakes, and pepper, and stir-fry for a few minutes until fragrant.
  3. Add the chopped parsley and lemon juice, and stir until just wilted.
  4. Serve immediately.


Tip: this goes really well with curries and rice. We served it on a bed of rice with our easy daal and vegan tomato "beef" curry.
