SIMPLE CARROT SALAD

What's up, doc? That's right. We're going full bunny with a carrot salad! Easy and simple, this salad is primarily based on kale, tomatoes, and you guessed it, carrots galore. We've also tossed in some hemp seeds for protein, omega-3, general awesomeness, and to defeat that never-quite-full-on-a-salad feeling. In other words, this carrot salad is super healthy.


A great side dish for lunch or dinner, this simple carrot salad also works superbly as a packed lunch because the raw carrots and kale stay nice and crisp all day. And because the dressing is made of lemon juice with just the tiniest amount of olive oil drizzled in, the majority of the fat comes from the hemp seeds, making it a great low-fat option to fill up on during meals.


The best part? The carrots don't need to be grated! Alright, it might not be the best part, but we really hate grating carrots because it takes sooo long. And this vegan carrot salad is all about saving time. That's why we also use pre-chopped kale, which makes this recipe a breeze. Here we go!


Ingredients:

  • 6 carrots (300 g/10.6 oz)
  • 8 cherry tomatoes
  • 30 g (1.06 oz) chopped fresh kale
  • 0.5 small red onion
  • 1 mild green chilli (adjust according to chilli preferences)
  • 2 tbsp. shelled hemp seeds
  • 4 tbsp. lemon juice
  • 1 tbsp. olive oil
  • 0.5 tsp. paprika
  • 1 tsp. freshly ground black pepper
  • Pinch of garlic powder (optional)
  • Pinch of salt


Instructions:


  1. Chop the carrots in thin-ish slices.
  2. Chop the tomatoes, onion, and chilli in small pieces.
  3. Toss everything together and enjoy!
