VEGAN CHEDDAR CHEESE

Everyone loves cheddar, and we certainly do too! So ever since we went plant based, we've tried to come up with a perfect vegan recipe for a "cheddar" that gives us the same lovely taste and melty capabilities without any animal products involved. 


So here's a perfect, easy recipe for those of you who love cheddar in your burger or vegan meatball sub, on your pizza or just on... everything. Let's get going!

 

Ingredients:


  • 35 g (1 oz) cashews
  • 2 tbsp. lime juice 
  • 350 ml (1.5 cups) water
  • 80 ml (0.35 cups) melted coconut oil
  • 4 tbsp. nutritional yeast
  • 2 tbsp. tapioca flour
  • 1 tsp. Himalaya salt
  • 2 dried chillies (or 2 tbsp. chilli flakes)
  • 1 tbsp. smoked paprika
  • 1.5 tsp. agar agar 
  • 1 tbsp. onion powder
  • 3 garlic cloves
  • 0.5 tsp. pepper corns (red if you have some) 



Instructions:


  1. Add all the ingredients to a blender (if you have a "slow" blender, you should soak your cashews for about 10 minutes in boiling water before adding them).
  2. Blend it until it's completely smooth.
  3. Add the mixture to a pot and boil on medium while stirring constantly.
  4. Grease a dish with a bit of oil. Pour the mixture in and refrigerate for 1.5 hours. If you want a liquid edition (e.g. for nachos), you can refrigerate for a shorter period or use it instantly.
  5. If you've refrigerated the mixture for at least 1.5 hours, it should be firm enough for you to pour it out. Now you have an amazing vegan cheddar!
  6. You can cut it into pieces although it's a bit soft, or you can use a spoon to add it directly to your sub, pizza, burger, mouth, or whatever you want.
